A Zesty Cucumber Salad For You.

Cucumbers have always been so refreshing and a great snack! I randomly came across an IGTV on Jeannie Mai’s insta and the recipe she made looked so delish!

This is the perfect snack or side and so easy to prepare! First, cucumbers are high in nutrients. They are also low in calories but high in many important vitamins and minerals. They contain antioxidants, boosts hydration, may aid in weight loss and promotes glowing skin.

I prefer to use french cucumbers (I just like them better lol). I slice down the middle long ways then chop into chunks down from right to left. The cucumber should be cubed like shown in the picture. This recipe is very impromptu. I did not use any exact measurements as shown in Jeanie’s video but trust me, it’s super easy. It also has a little spice to it…just to let ya know. lol See instructions below!

The Recipe:

You will need

  • 2 French Cucumbers

  • Your fave Asian Dressing

  • Roasted Sesame Seeds

  • Cayenne Pepper

  • Hot Sesame Oil

  • Salt

  • Pepper

First, add the cucumbers to a tupperware bowl. Then drizzle your fave asian dressing over the cucumbers, sprinkle on the roasted sesame seeds, then add about a 1/2-1 tsp of cayenne pepper. Next, add another drizzle of the hot sesame oil (maybe 2 tablespoons). Lastly, add a dash of salt and pepper for taste. Adjust lid to container and shake for about 30 second until all pieces are covered. Pour over your fave dish and enjoy with your preferred beverage. I enjoy a sparking lemon water with this snack.
